The owner of a seafood emporium and a butcher shop inside the Grand Rapids Downtown Market is planning a restaurant concept.
Jeff Butzow, owner of Fish Lads and Carvers at the Downtown Market, said he will open a restaurant called Pinktail Poke, serving poke bowls, also inside the indoor market.
A build out of the space, which will be on the east side of the market hall, started this month.
Butzow estimates the eatery will open in early 2020.
“Poke has always been an inspiration after living in the Pacific Northwest, and we already have the perfect connections through Fish Lads to facilitate sourcing the highest-quality seafood,” Butzow said.
Pinktail Poke will serve “premium-quality” poke made from scratch with fresh seafood and “purposefully sourced” ingredients.
The restaurant’s options will be “customizable, approachable and accommodate most, if not all, dietary requests,” according to Butzow.
