
Squibb Coffee Bar on Friday celebrated the grand opening of its new location in the Grand Rapids Downtown Market.
In addition to being open to the market hall, the cafe, next to Slows Bar-B-Q, will offer a dedicated entrance on Ionia Street, allowing for direct customer access and early daily opening times.
Owners Mallory and Dennis Squibb, a father-and-daughter team who opened their original Wealthy Street location in November 2016, said they are enthusiastic about cutting the ribbon at their new café at the downtown market.
“We’ve had a great team working hard to get the coffee bar ready, from the initial planning to the final build-out, and we are thrilled to welcome people into this unique space,” said Mallory Squibb.
In addition to traditionally prepared coffee and tea beverages, Squibb also will offer vegan doughnuts and pastries from Rise Authentic Baking Co., which they partnered with in 2018 to open Rise + Squibb on Fulton Street. A menu of housemade toasts also will be available, prepared with bread from neighboring Field & Fire, along with locally sourced jams and toppings.
Squibb prepares its coffee beverages using beans from Onyx Coffee, a craft roaster in Arkansas that ethically sources its single-origin beans and roasts them to Squibb’s specifications.
“We feel that in order to make the best coffee drinks, you start with exceptional ingredients. Our baristas pride themselves on the preparation process, and we invite our customers to learn more about the craft,” Mallory Squibb said. “This process includes manual espresso machines, which allows Squibb’s baristas to control the quality and consistency of every espresso shot used in their beverages. We love providing a relaxing experience for our visitors and want to create a friendly, cozy environment where everyone can enjoy excellent beverages and food.”
Part of this friendly environment includes a floor-to-ceiling mural painted by local artist and Pratt Institute of Art student Nina Lu.
“Mallory had ideas about the color scheme and general subject matter, but she was very trusting and open-minded. I made sure the colors and composition were chosen to match the vibrant hustle of the Downtown Market,” Lu said.
The nature-forward mural is inspired by Lu’s connection to growing up camping and backpacking.
“I will always have a deep love for Michigan; the intersection of art and environmental science is a consistent passion of mine,” Lu said. “Ultimately, I’m drawn back to this state because of the people and the woods.”
Squibb’s downtown market hours will be 8 a.m.-7 p.m. Monday through Thursday, 8 a.m.-8 p.m. Friday and Saturday, and 9 a.m.-7 p.m. Sunday.
