Vander Mill Announces New Executive Chef

A new executive chef is taking over Vander Mill’s kitchen.

Vander Mill announced this morning that Peter Davidson will serve as executive chef for its Grand Rapids location.

Davidson is well known in the Grand Rapids culinary scene. He had a hand in opening The Winchester and Grove. He was also the owner of Saburba in Ada, which recently closed.

Vander Mill said Davidson plans to infuse its menu with “bold flavors from Latin and Spanish cuisine.” Also in the works is a new house made hot sauce highlighting Vander Mill cider.

New items created by Davidson will be available on the menu by the end of August.

Originally from Lowell, Davidson started his culinary career in Wyoming and Colorado, working across a variety of southwestern kitchens. Before moving back to West Michigan, he moved to Philadelphia to study at The Restaurant School at Walnut Hill College, and worked under two-time James Beard-Awarded Chef Guillermo Pernot at ¡Pasión!
